Senses Alicante Bouschet

Winemaker: Óscar Gato
Grape varieties: 100% Alicante Bouschet

Soil: Chalky-clay and schist
Vinification: A variety that has been highly adapted, over tens of years, to the soil and weather conditions in the Borba region, and therefore included in most of the vine populations in the vineyards of the Adega’s members. One of the main blending varieties in the red wines produced by Adega de Borba, it provides important sensory characteristics – balance and structure. The grapes have been selected with strict monitoring of ripening. At the winery, after being manually harvested and carefully transported, the stalks were removed from the grapes and they were fermented in stainless steel presses, with complete maceration, at a controlled temperature of 25ºC, followed by malolactic fermentation in stainless steel vats. To achieve greater complexity and a balanced structure, the wine was aged for 9 months in new French oak barrels and around 4 months in the bottle.
