Paço dos Infantes White Selected Harvest

Vinification: At the vineyard the grapes areharvested manually to 14kgs containers. After a 24 hours storage in a cold room at 8ºC to release the aromas, the grapes are carefully chosen in the selection tables. Then they will be crushed and the stalk will be retained. Next, it passes the exchanger at 6ºC into the press where the grape skin will be retained. Fermentation process is carried out in stainless steel with the presence of american oak staves and controled temperature between 14 / 15ºC for 20 days. 


Tasting Notes

Colour: Pale yellow.
Aroma: White fruits, quinces and lychees.
Palate: Notes of tangerine skin and freshness.
Gastronomy: Grilled fish, seafood or sushi.
Consumption: 10-12ºC (recommended temperature)
