Monsaraz Millennium White

Grape Varieties: Antão Vaz (60%) - Gouveio (40%)

Vinification: After the selection of the grapes in the vineyards of our associates, we proceed to the manual harvest. In the cellar are unloaded and immediately stripped and crushed. Then they are pressed and the juice obtained is clarified by decantation. The temperature of the mash is then adjusted to 12° C, selected yeasts are added and fermentation starts, which lasts about 2 to 3 weeks.
Ageing: Ending the fermentation, racking is made thick edges and begins to batonnage with fine sludge for 3 months. At the end of this process, it leads to stabilization and bottling of the wine.
 

Tasting notes

Color: This wine presents a crystal clear garnet colour.
Aroma: Nose full of red fruit.
Palate: Mellow and full-bodied, with soft tannins that gives it a lingering finish.

Consumption: It should be drunk immediately at a temperature of 12ºC.
Gastronomy: It goes very well with salads, seafood, fish and white meats.
