Grape varieties: Touriga Nacional, Touriga Franca, Alicante Bouschet and Shiraz.
Production method: Each grape variety is harvested separately as it reaches maturity. After being hand-picked, the grapes are immediately transported in 20 kg boxes to the winery where they are collected in stone tanks for foot-treading sessions, twice a day over 5-6 days. The wine is then run off into 225-litre barrels of new French oak where it is matured for 12 months. It is then allowed to mature for a further 12 months in bottle.
Climate: Mediterranean with cold winters, rainfall concentrated between October and February (with an average annual rainfall of 700mm) and hot summers with temperatures reading 40ºC at the time of maturation.
Soil: A mediterranean mix of clay and sand; poor to average quality.
Colour: A striking garnet colour.
Aroma: The aromas are dense with notes of violets, black fruits, mint and spices.
Palate: The palate is soft, cool, showing structure and balance. A wine of distinct elegance.
Serving suggestions: Serve at 18ºC as an accompaniment to casseroles, lasagne, moussaka and stews.
