In the constant demand for high quality products, the Cartuxa Winery produced the first sparkling Reserva Alentejo DOC Brut - Évora. This wine was obtained by the classic method resulting in a fresh and elegant wine.

Vinification: Base wine produced from rigorously selected grapes and harvested in the ideal maturation stage for the production of a sparkling wine. Fermentation at controlled temperature, carried out in French caravaggio barrels. Stage on fine sludge for 6 months with periodic batônnage. Second fermentation in bottle by the classic method, followed by stage on sludge and intermediate batônnages during 4 years, in the cellars of the Cartuxa Monastery. Degorgement in November 2015.
